Pumpkin Square Recipe

Hello Friends!  Fall is finally starting to arrive here, and we are enjoying every cool day we get :)  Since it is starting to get cold, we got inspired to bake something pumpkin-ey.  So today, I am going to share the recipe we made, and I'm sure you'll love it! They are called pumpkin squares, and they taste to amazing.  It makes me want to sit, down with cuppa' tea and read a book :)  Anyway, below is the recipe, hope you enjoy!




1 pkg yellow cake mix (reserve 1 cup for topping)
½ cup (one stick) melted butter
1 egg
-Combine the above and press into a 9” x 13” pan, with only the bottom greased

1 can seasoned pumpkin
2 eggs
2/3 cup milk
(you will need to add sugar if you use the un-seasoned pumpkin.  In that case, follow the directions on the can for the amount of spices and sugar, but NOT for the eggs or milk)
-Combine and pour over cake mixture in pan

1 cup reserved cake mix
1 tsp cinnamon
¼ cup (half a stick) butter
¼ cup sugar
-Combine final ingredients and sprinkle over top
-Bake at 350 F for 45-50 min (I usually bake for an hour), or until knife inserted into center comes out clean.

Let cool completely and cut into squares.

As you can see, the bottom layer is a yellow-cake, the middle is a seasoned pumpkin mixture, and it's sprinkled with a crumb topping :)

Mug Cakes!

Hey Friends!

I have a recipe to share today! They are mug cakes! They are really yummy and super easy too :) If you just need something sweet this would be it!

What you need:

1 mug
1/4 cup powdered sugar
1 egg
2 tablespoons cocoa poweder

Whisk really, really good, then poor into mug (or you can do it all in the mug, but I find it easier to whisk in a small bowl) then heat in microwave for 1 minuet and enjoy.  If you want to, you can add, icing, fruit, whipped cream, or any kind of topping to it.

Nutella Fudgesicles!

Here is another wonderful recipe that is just as if not more easy than the other recipe I posted!!  They are Nutella Fudgesicles, and they are just delicious!  They came out so creamy and smooth!

Ingredients:

-Nutella - 1/3 cup
 -Milk - 1 cup

Instructions:

In a bowl, combine the nutella and milk together, and stir it with a whisk until all the clumps are out and the nutella  in good and mixed in.

when your done stirring it, poor them into Popsicle molds, or cups (if you use cups make sure you stick a spoon or stick in it before you freeze it) and then put them in the freezer.
They froze rather quick for us.  They were done in about 4-5 hours and they we soooooo good!

Chocolate Covered Ice Cream

Hello, and Happy Wednesday!

I recently made a dessert that was just wonderful and I had to share it.  It is so easy and quick too!

Ingredients/supplies
-Ice cream (I used vanilla)
-Melting chocolate
-Nuts (optional)
-Melon scooper
-wax paper

1. put a sheet of wax paper out

2. Melt the chocolate, a small bowl works the best (I melt it for about 20-30 seconds)

3. When the chocolate it melted, start scooping the ice cream (don't defrost it) and just scoop it and put it in the chocolate.

4.  When your finished making them, put them in the freezer for 5-10 minuets and then enjoy :)
